Coconut Lentil Curry

Coconut Lentil Curry is one of my favourite go-to dishes to make. It is really healthy and super delicious to eat. I love the creaminess of the coconut milk and lentils are very filling to eat and quick to cook. I was able to find all the ingredients in bulk and a great way to reduce waste is to cook your own meals. This is perfect to serve over brown rice.

Prep time: 5 minutes
Cook time: 20 minutes

Serves 4 people.

Ingredients

  • 1 cup of red lentils
  • 1 diced onion
  • 2 cloves of minced garlic
  • 1 can of tomatoes
  • 1 can of coconut milk
  • 1 big handful of spinach
  • 1 tsp of cumin
  • 1 tsp of turmeric
  • 1 tbsp of curry powder
  • 1 tsp of chilli flakes or 1 fresh red chilli
  • 1 cup of water

Optional:

  • 1 tsp of mustard seeds
  • 1 tsp of coriander seeds
  • A few curry leaves
  • Fresh parsley or coriander

Heat oil in a pot over medium-high heat. Fry the onion, garlic and chilli/chilli flakes until onion is translucent. Stir in mustard seeds, cumin, turmeric, curry powder, salt and pepper. Add the red lentils and stir for a few minutes. Add the can of tomatoes and one can of water. Boil and then simmer for 10min. Add can of coconut milk and simmer for 10min. Add spinach and stir in until wilted. Serve over cooked brown rice and garnish with fresh parsley or coriander.
